PINOT NOIR

Oltrepò Pavese is the Italian homeland of Pinot Noir with 3.000 hectare in production. The Pinot Noir in Oltrepò Pavese presents one of the greatest vine variety in Italy and worldwide for terroir and quality.
In the 1980, Professor Mario Fregoni mentioned: “Today Oltrepò Pavese is one of the most important European and world wine-growing areas for the production of quality sparkling wine and is the most extensive area in Italy planted with Pinot Noir”.
Planted in ideal conditions, and only in areas suitable for its cultivation, you get great quality levels with varietal characteristics.
The Pinot Noir were already cultivated by the Romans in Oltrepò, which probably took him in southern France.
It was introduced in Oltrepò in the middle of 800 thanks to noble wine growers in the area.
In the early ‘900, thanks to some companies of sparkling wine, the Pinot Noir is extended in the Oltrepò Pavese, confirming a highly suitable area for the cultivation of this variety. Rossetti & Scrivani has selected the most suitable positions in this exclusive varieties, making it an icon of the company’s sparkling wine production.

TRADITIONAL METHOD

Elegance, class and style

Distinction and specialization are the primary objectives of Rossetti & Scrivani’s work, selecting the wines that best express the company’s personality, the nature of the cultivated land and their winemaking techniques.
From the vineyard start the long history of the traditional method Rossetti & Scrivani.
The Pinot Noir grapes, hand-picked and placed in boxes of 20 kilograms, goes to the cellars where they are loaded into the soft press that ensures the delicate and progressive pressing of the grapes.
The musts are divided and selected and only the first pressing becomes cuvée and plays the alcoholic fermentation in stainless steel tanks.
The base wines, after the fermentation are undergo to the bâtonnage, which adds structure and aromatic richness.
In late spring it assembles the final cuvée choosing the best batch.
After the tirage, the bottles are stacked in the cellar at controlled temperature, kept for the time of second fermentation and subsequent aging on the yeast from 24 up to 60 months. When the bottles have reached perfect ripeness, the ridding and disgorging complete the long process of preparation.
The elegance of Pinot Noir with traditional method makes each bottle signed by Rossetti & Scrivani a proposal of excellence. This is the result, after years of preparation, of a traditional method synonymous of elegance, class and style.
